Akashi Sake Brewery is located in the Hyogo region, facing the Seto Inland Sea, Japan . The Yonezawa family settled in Akashi City in 1856. After mastering the art of brewing sake, the family began distilling in 1917. A century later, Kimio Yonezawa, the master blender, honors his legacy.
Daiginjo Genshu sake is made from Yamadanishiki variety rice from Hyogo and polished to 38%. He is dry.
