Hendrick's Distillery is located in the village of Girvan , Ayrshire , south-west Scotland . It overlooks the volcanic island of Aisla Craig. Since 1999, Master Distiller, Lesley Gracie , has been working on the recipe that made Hendrick's Gin famous. 11 botanicals are used in the making of the Gin, complemented by essences of rose and cucumber . The Gin is distilled in two completely different kinds of stills. The two leaders in this particular set of stills are the Bennett, an old copper pot still dating from 1860, and the Carter-Head, originating in 1948, only a few of which still exist today. The Bennett steeps the botanicals in the neutral spirit overnight before distillation, while the Carter-Head gently steams the botanicals in a basket atop his neck, which resembles a botanical steam bath.
