Domaine Jonathan Didier Pabiot - Chasselas 2022
Domaine Jonathan Didier Pabiot is located in Pouilly-sur-Loire, in the Loire Valley. In 2005, Jonathan Pabiot , former motocross champion, took over the 3.5 hectares of vines from his father Didier. Today, the vineyard extends over 20 hectares on several types of soil, mainly limestone, caillottes and white land. The vines are cultivated in an artisanal way, with great attention to the importance of respecting plants and living things: all the plots have been organic since 2006 and certified biodynamic since 2016.
This cuvée is made from Chasselas , from a small plot planted by Jonathan's grandfather, Lucien. The vine is grown at a place called Les Champs Piot, on a clay-limestone soil with an area of 0.2 hectares. The vine is 45 years old and the yield is controlled to obtain more concentration. The wine is aged for 6 months in stainless steel vats .
