The Saint-James Distillery is located in Martinique . Its story begins with Reverend Edmond Lefébure, who was then Father Superior at the Brothers of Charity convent and a chemist at heart. It did not take long for him to detect the potential of the cane brandies distilled near his hospital and set about making them himself. The story followed its course and in 1973, the Cointreau company acquired Rhums Saint-James and brought all production to Sainte-Marie . In 2003, Cointreau sold the distillery to La Martiniquaise , its current owner.
Saint James rum comes from the fermentation then distillation in a Creole column of pure sugar cane juice. This production method, recognized as AOC rum from Martinique, gives Saint James rums a multitude of aromas, perfectly suited to aging in oak barrels . No addition of sweetener is tolerated. Today, the distillery is committed to a sustainable economy , in order to minimize the impact on the environment. The sugar cane plantations, near the distillery, reduce the cane transport routes and therefore CO2 emissions. Bagasse, the fibrous residue of sugar cane after pressing its juice, is used as fuel to create the water vapors necessary for the operation of distillation columns and cane crushing mills. Another part of the bagasse will be placed in compost or transformed into electricity via a turbo-alternator. Finally, the vinasse (the liquid residue from distillation) is treated to obtain water used for irrigating the sugar cane fields.
The Les Ephémères Lot No.5 cuvée is a limited edition of 5,006 bottles . This very old agricultural rum was put into 320 liter French oak barrels on December 20, 2005 and bottled raw from barrel on October 3, 2022.
