The independent bottler Michel Couvreur was originally a producer and merchant of Burgundy wine. He turned to the world of whiskey in 1978 and distilled for the first time in Edradour in 1986. At the time, he wanted to buy a distillery in Scotland but his wife was against it and they decided to settle in Bouze-Lès-Beaune , halfway between Scotland and Andalusia, and to intervene in the breeding of whiskeys; mainly in Sherry and Port barrels. The range is very varied and meticulous work of assembly, selection of new barrels and unusual techniques is undertaken daily. Since his death in 2013, his son-in-law Cyril Deschamps and his wife Alexandra continue the work of Michel Couvreur.
Clearach is aged for a minimum of 3 years in Sherry barrels. This edition was distilled in 2019 and bottled in 2022.
