RUM A1710 - La Perle Fine - Edition 2022 - 67.5%
The history of the Assier family in Martinique began in 1710 when Jean Assier, a young lawyer from Montpellier, arrived on the island and worked in the service of the Governor of Phélypeaux. A few centuries later, his direct descendant, Yves Assier de Pompignan , embarked on a daring and exciting project: the creation of a new rum factory carrying within it the history and richness of the West Indies terroir. Indeed, the resumption of the Habitation du Simon, ideally located in the heart of an exceptional terroir, and the unfailing passion which drives him for his island and its riches, have enabled Yves Assier de Pompignan to work ever since many years creating a rum brand combining tradition and modernity .
In 2010, the decision was made to start the project and the work of selecting great old rums intended for blending began. An aging cellar equipped with a barrel previously used for Cognac and a laboratory were created at the Habitation. The first selections, then aged 6 to 11 years, were put back to age in 320 liter French oak barrels. At the same time, the search for an innovative distillation solution, qualitative and traditional at the same time, guided Yves Astier towards the choice of a Charentais still made entirely of copper, completed with a column with seven trays . Temperature-controlled fermentation tanks allowing long fermentations are used in order to obtain cane wines with strong aromatic potential. The administrative procedures, long and tedious, culminated on December 31, 2015 following the authorization to open a distillery intended for the manufacture of Agricultural Rums. Work on the rum factory then began and it was installed in a former 18th century sugar purge, in the heart of the estate. Finally and after 10 years of time spent learning and imagining, the brand new A1710 distillery was inaugurated in December 2016 at l'Habitation by Yves Assier de Pompignan and his team.
A1710 Rums are produced organically from sugar cane from a plot cultivated without fertilizers, pesticides, herbicides or other chemicals, which was planted on the site and where two varieties of cane grow: the “ Blue Cane ” and the “ Purple cane ”.
La Perle Fine is distilled twice from fresh cane juice, coming from the plots of Madame Joseph Sylvestre and Monsieur Paul Octave de Ducos et du Saint-Esprit. The canes are cut by hand and are only pressed once. After a long fermentation of 5 to 7 days, the vésou is distilled twice several days apart. This rum is bottled at its natural strength of 67.5%.
