Domaine de Saint Cosme - Gigondas - Hominis Fides 2006
Located in the heart of the Gigondas appellation, Saint Cosme is a historic estate of a unique kind: its Gallo-Roman winemaking site is made up of fermentation vats cut into the rock. Acquired by the Barruol family in 1490, the property has seen 15 generations of winegrowers succeed one another. It includes 22 hectares of old vines with an average age of 60 years. In 1972, Henri Barruol was already convinced by the interest of organic viticulture . He practiced it to respect his vines, produce clean wines and protect the ecosystem of the Saint Cosme valley. Today, Louis Barruol , his son, manages the estate and created a “Négoce-Vigneron” in 1997.
Gigondas Hominis Fides is made from old planted Grenache vines, grown on Miocene limestone sands at a place called Hominis Fides. Vinification takes place in whole clusters. The wine is aged for 12 months , in pieces of one wine (50%), in pieces of 2 and 3 wines (30%) and in new barrels (20%).
