RUM A1710 - La Perle Rare - Organic Reed Cane 2023 - 54.1%
The history of the Assier family in Martinique began in 1710 when Jean Assier, a young lawyer from Montpellier, arrived on the island and worked in the service of the Governor of Phélypeaux. A few centuries later, his direct descendant, Yves Assier de Pompignan , embarked on a daring and exciting project: the creation of a new rum factory carrying within it the history and richness of the West Indies terroir. Indeed, the resumption of Habitation du Simon, ideally located in the heart of an exceptional terroir, and the unfailing passion that drives him for his island and its riches, have enabled Yves Assier de Pompignan to work ever since many years creating a rum brand combining tradition and modernity .
In 2010, the decision was made to start the project and the work of selecting great old rums intended for blending began. An aging cellar equipped with a barrel previously used for Cognac and a laboratory were created at the Habitation. The first selections, then aged 6 to 11 years, were put back to age in 320 liter French oak barrels. At the same time, the search for an innovative distillation solution, both qualitative and traditional, guided Yves Astier towards the choice of a Charentais still made entirely of copper, completed with a column with seven trays . Temperature-controlled fermentation tanks allowing long fermentations are used in order to obtain cane wines with strong aromatic potential. The administrative procedures, long and tedious, culminated on December 31, 2015 following the authorization to open a distillery intended for the manufacture of Agricultural Rums. Work on the rum factory then begins and it is installed in a former 18th century sugar purge, in the heart of the estate. Finally and after 10 years of time spent learning and imagining, the brand new A1710 distillery was inaugurated in December 2016 at the Habitation by Yves Assier de Pompignan and his team.
This edition of La Perle Rare is made from Roseau sugar cane ( B59-92 ), also called “Yellow Cane”, grown organically .
