The Pasquet Cognac House is located at Chez Ferchaud-Eraville, in Bellevigne in Charente . In 1970, Jean-Luc Pasquet inherited from his uncle Albert and became responsible for the family estate, which includes 8 hectares of vines in Grande and Petite Champagne. The estate expanded to 14 hectares, cultivated since 1995 using certified organic farming . The 20 hectoliter still produces fine and rich eaux-de-vie from a double distillation process, which are then aged for a minimum of 4 years, or 2 more years of legal oak aging to obtain the "Cognac" designation. The House is now run by Jean Pasquet and his wife Amy, who is of American origin.
Symphonie des Terroirs No. 2 is part of the Confluences collection. It is a blend of several vintages : Fins Bois Lot 81 (50%), Borderies Lot 90s (35%), and Grande Champagne Lot 57/62 (15%). 255 bottles were produced.
