In 1997, Christian Chabiran decided to acquire a farm virgin of any vines, located near his birthplace, on an old island in the middle of the Poitevin marsh, and to create the vineyard of La Chaume there.
Prieuré la Chaume is an organic wine very famous in the Vendée vineyards. The 2015 vintage is fruity to perfection with a touch of spice on the finish.
A short vatting period on a perfectly ripe harvest in order to extract the fruit. A very deep Mazarin red color with purple reflections. On the first palate, this supple and velvety wine reveals aromas of black berry fruits, such as blackcurrant. Supple and fleshy, this wine has a more spicy finish with peppery notes.
A wine to be tasted now for its fruitiness and the velvety tannins, but whose structure concentration suggests a real capacity of conservation over two or three years.
Served at 15 - 16 ° C, it goes wonderfully with game meats, roast poultry and soft cheeses.
