If you like active wood and peat look no further! Lots of spices, fruit, a very interesting saline note in this profile and a very rich texture as with most Roofers. A committed style but which sends and that we really liked for its gourmet and sweet / salty side
The malts that make up this whiskey are aged in half PX sherry casks.
More precisely, on the nose there is an attack of vanilla caramel that one would not necessarily expect on PX. Then we go into a world already more standard to expectations. Sweet spices (cinnamon and ginger), dried fruits with grapes, nuts, some citrus peels. We find a malty and slightly grassy side, then we find a buttery tone. All this being perfectly surrounded by a present but subtle oily peat. A saline side also emerges.
In the mouth we find the Christmas cake side, with butter, spices, dried fruits. The peat becomes liquorice and then ashy. The salty side is still present as the fruits go to play on new grounds. Cherry, black fruits, and grapefruit show themselves as we finish on a peppery note.
The finish is long, on citrus, black fruits, spices and peat.
