ILARRIA is an old house in the village whose name meaning evokes a heathland site: Iri ( site) larria ( moors ). The property has 30 hectares, including 10 hectares planted with vines. It has been a family property for several centuries. The buildings with Lower Navarre architecture house a vat room and a buried barrel cellar.
In order to preserve the intrinsic qualities of the grape as much as possible, this dry white is produced using an artisanal and natural vinification method, respecting the precepts of organic farming. Thus, all fermentations are made from indigenous yeasts and bacteria. No chaptalization, or deadification, or other chemical or technological intervention that can transform the original product.
