This appellation takes place in the continuity of the terroirs of Aloxe Corton and Savigny les Beaune. The basement is draining, quite stony. The clay-limestone soil is light. This plot was planted in 1982.
VINIFICATION AND AGINGThe harvest is entirely carried out by hand. The grapes are transported in small boxes and then carefully sorted when they arrive in the winery. They are then completely destemmed and placed in vats by gravity, in order to preserve their integrity. After a pre-fermentation maceration of 5 to 6 days at 10 ° C, the alcoholic fermentation begins naturally at a regulated temperature. During this period, the daily tasting makes it possible to adjust the punching down and pumping over operations to the particularities of the vintage. After two to three weeks of vatting, the wines are housed in oak barrels for a period of 12 months. Malolactic fermentation takes place there naturally in spring. After racking, the wines are assembled in vats until bottling provided by us during the following winter, without fining or filtration.
TASTING PROFILEA wine with a nice nose of small red fruits, slightly spicy. The palate is round, well structured and offers pleasant tannins.
