The rosé comes from a selection of plots of vines with an average age of 20 years offering small yields, hence a concentration and expression of each grape variety which is revealed in this wine with great intensity.
The presence of Mourvèdre gives it a lot of character, balance and complexity on the guard. This rosé attracts by its power on the nose in scent of fruits and flowers. Its full, round palate with aromas of fruit (peach, pomegranate, etc.) with a slight tint of spices reveals a beautiful freshness through its acid balance.
The harvest is carried out by hand. As for the ripening of the grapes, we are looking for a little freshness, acidity and a lower degree than for the reds. They are spread over four weeks and start from the last week of August. Harvests in 30 kg boxes - whole bunches - sorting is carried out in the vineyard and in the cellar. After total destemming, the juices are obtained by direct pressing and cold skin maceration so as to extract fruit aromas and obtain a pale color. We do very little bleeding. Then we proceed to a classic white wine type vinification with temperature control. The rosés are kept for 8 months in concrete vats before bottling.
