A clever blend of the different terroirs that make up Domaine Tempier, this wine is composed of 70 to 75% Mourvèdre depending on the vintage, associated with Grenache and Cinsault and a small hint (2%) of old Carignan.
It is a fruity and balanced wine that we enjoy drinking after 3 or 4 years but which develops a very beautiful bouquet of tertiary aromas (leather, animal, undergrowth) with a little more age. Its balance allows it to last up to 15 years or more.
The classic cuvée includes a blend of different terroirs. At the place known as the "little mill of Cadière", the vines extend over reliefs arranged in terraces facing south, the peculiarity of the soil is distinguished by the presence of rudist limestones (bivalves of the lower Santonian - 85 Ma).
Around the domain, we find rather heavy clays deep in some places, relatively little in others, even if these clays are quite compact we also find more silty-sandy colluvial horizons (strata), which one might think they play a minor role but which are very interesting because they are very draining and not very rich, therefore bringing a lot of finesse to the wines.
