RUM DEPAZ - Single Cask 2003 - 45%
The Depaz distillery is one of the finest rum distilleries in Martinique . Installed in a sumptuous setting, at the foot of Mount Pelee, it was founded in 1651, under the will of Jacques Duparquet, the first governor of the island. It was totally destroyed during the eruption of Mount Pelée on May 8, 1902, before being rebuilt by Victor Depaz and his descendants. It will not take long for the quality of the rums produced by the Depaz distillery to radiate throughout the world, fueled by sugar cane from rich volcanic soil and water of exceptional purity. Rooted in tradition, this distillery is one of the smallest in Martinique whose heart is still powered by an old steam engine.
This Depaz Single Cask 2003 comes from a single cask containing a distillate from the year 2003, an exceptionally sunny year which allowed the development of sublime rums. 11 years under the watchful eye of Cellar Master Nora Carrion Martinez were then needed to age these eaux-de-vie in oak barrels to give this rum its mahogany-coloured robe.
Amber in appearance, it offers an intense scent of fruit, spice and vanilla. On the palate, the first slightly woody notes give way to subtle scents of cocoa and dried fruits.
