Gros-Manseng is the grape variety richest in sugar, and the one that the estate harvests last. In Gascony there is regularly a very beautiful late season. It is "the summer of Saint-Martin", an autumn sun favorable to the grapes, a dry period which allows our Gros-Manseng to ripen quietly and to drink sugar.In order to maintain its softness, fermentation is stopped by cooling the wine at the desired time. The wine is drawn off quickly and stored on its fine lees at low temperature.
The "Hazelnut" is tasted between 9 and 12 degrees. It will beappreciated as an aperitif, with Foie Gras, charcuterie ... with blue cheeses, or hard cheeses flavored with Comté. Also to be enjoyed with a fruit dessert.
