PHEASANT'S TEARS - GEORGIA - Saperavi Red 2016

A 100% saperavi from vines that grow at an altitude of 480 meters, 50% de-stemmed and macerated with its skins for a month.

Fermented in kvevri (amphorae buried in the earth) with indigenous yeasts and aged in these same amphorae for nine months.

Thus, Pheasant's Tears Saperavi is an intense and earthy wine, with aromas of blackberries, ripe black currants and toasted almonds, with an elegant tannic structure and very good acidity. A spicy and slightly dry finish.

Gela Patalishvili is a winemaker and farmer in the Kakheti region, near the Azerbaijani border. His partner, John Wurdeman, is an American painter living in Georgia since 1998. Their friendship and common passion for wine led them to create Pheasant's Tears in 2007. Gela is a true earthling, passionate about the vine that he cuddles all the time. year.

Saperavi, Georgia's most popular red grape, is so impenetrable in color that Georgians call it "black". The very pulp of the grapes has this color and all this chromatic charge is transferred to the wine.
