BOLOGNE - White Rum - La coulisse - Cuvée parcellaire - 60 %

The Bologne distillery was born in 1887 in Guadeloupe in the French West Indies. In a small paradise, between sea and mountains, it enjoys a magnificent volcanic soil perfectly adapted to the development of sugar cane. The typicality of the Bologna rums can be explained by all the following factors: pure mountain spring water, optimal exposure to the sun, volcanic soils rich in minerals for the well being of canes and iodized air that bring this small saline touch. That's the magic of these rums: the conjunction of these natural elements.

And it does not stop there because Bologne is also the Black Cane. An old variety of cane that was abandoned for its low sugar production. But if it does not produce much, its juices are of extreme quality! Bologne, it is the only distillery of the island which still owns these canes. An exceptional aromatic potential that today is an integral part of the entire range of products of this beautiful house, such as the world-famous Black Cane vintage.

The Cuvée Bologne La coulisse is a plot of 4 hectares. 100% black canes, this very old parcel has an exceptional exposure which ranks it in front of the others. As in the past 130 years ago, the same methods are used to manually pick up canes. Cut by hand, always in good weather and transported as quickly as possible to distillery to preserve the aromas and avoid oxidation of canes. Pressed, crushed, fermented and distilled in a copper column, the juices are then aged for several months in order to have an optimal ripening of aromas and a slow oxygenation to create an exceptional white rum!

In tasting, we advise you first of the dry taste. At least once even if you love just like our team of Clos des Millesimes the Ti'Punch. Because he really deserves it. On the nose reveals a harmony of aromas typical of vesou and combines with the floral notes of iris and narcissus. On the palate it's power and sweetness. A juice of a beautiful roundness and aromatic complexity worthy of a great rum tasting. The finish is long with notes of candied bananas. A very nice bottle!
