Domaine Pattes Loup - Chablis Vent d'Anges 2018
Domaine Pattes Loup is located at Courgis, in the Chablis region of Burgundy. Thomas Pico discovered a passion for viticulture very early on, growing up surrounded by a winegrower's father and grandfather. He studied viticulture and oenology in Beaune and then returned to the family estate of Bois d'Yver in 2004. A year later, in 2005, Thomas took over 8 hectares of vines from the family estate and also began to plant his own vines on the place called “Pattes Loup”, hence the name of the estate.
The first vintage under the Domaine Pattes Loup was bottled in 2006. Today, Thomas manages 25 hectares of vines organically farmed in the village of Courgis. The estate was certified in organic farming in 2009. Thomas works a meticulous approach, focused on respect for nature in the vineyard, with a thoughtful style of winemaking, unique to Chablis.
Chablis Vent d'Ange is made from organically grown vines in the localities "Pattes Loup", "Les Menardes" and "Les Malentes". Fermentation takes place with indigenous yeasts and the wine is aged in stainless steel and concrete tanks. Bottles of Chablis Vent d'Ange spend one year in used oak barrels and two years in vats.
