DOMAINE PHILIPPE BORNARD - Le JO LIQUEUR 2016
Domaine Philippe Bornard is one of the most renowned in the Jura. Originally from the village of Pupillin, Philippe Bornard had always worked in the vineyard but was selling his grapes to the cooperative wine cellar of his village before taking the plunge in 2005, producing his own wines. Today, Tony Bornard (his son) manages the Domaine which extends over 11 hectares in Arbois-Pupillin, and in the Côtes du Jura. The vineyard is planted in Chardonnay, Savagnin and Melon for the white grape varieties and in Ploussard, Trousseau and Pinot Noir for the red grape varieties. The vines are cultivated with respect for the environment, in organic certification with very little human intervention.
Jo Liqueur is a liqueur wine made with Chardonnay according to the ancestral method. The grapes are harvested then pressed and the juice is reduced in copper cauldrons for 48 hours. It concentrates in sugar and is then mutated with marc (aged at least 18 months and up to 10 years) and “fine” (an alcohol made from the lees) from the estate to reach 17% alcohol. The exact proportions of marc and fine vary according to the harvest, but it is generally about two thirds of grape juice for one third of alcohol. The wine is then aged in barrels for at least seven years. Because the grapes have not been fermented, the Vin de Liqueur retains the varietal character of the grape.
