Domaine du Pelican - Brut S° 2018
Domaine du Pélican is located in Montigny-Lès-Arsures, in the Jura. The project was born in Taillevent, a Parisian restaurant, where the sommelier blindly served Guillaume d'Angerville (owner of the great domain of Volnay: Le Marquis d'Angerville) a bottle of Chardonnay 2005 from the Jura. Struck by its quality, Guillaume was surprised to discover that the wine was not from Meursault, and even less from the Côte d'Or. This moment was the trigger for an exciting new project. Several visits to the Jura and many tastings later, Guillaume was convinced to buy land in this region. He called on Yves Hérody, a renowned geologist from Jura, to find the best wine-growing sites. This trip lasted three years and resulted in an agreement with the Château de Chavannes in Montigny-Lès-Arsures in 2012 for the purchase and rental of five hectares. Jean-Marc Brignot then sold him five additional hectares and finally, in 2014, five hectares were leased to Jacques Puffeney, a retired Jura legend. The estate is managed by François Duvivier, who heads a team permanently based in the Jura. The 15 hectares of vines are located between Arbois and Montigny with, among others, the Grand Curoulet and En Barbi plots. The vineyard is certified in organic and biodynamic agriculture.
Brut S° is the latest from Domaine du Pélican, with the first vintage 2018. It is entirely made from Savagnin, which prohibits the appellation "Crémant du Jura" whose specifications stipulate that the Pinot Noir/Chardonnay/Trousseau must represent at least 70% of the cuvée (which limits the Savagnin to 30%). The fermentation took place after a year of aging, by assembling the wine aged with 10% of the following vintage at the start of fermentation. The disgorgement took place after 13 months.
