CLOS LES METS D'ÂMES - PIMPRENELLE 2019
Le Clos les mets d'Âmes is located in Aurions-Idernes, in Aquitaine. Created in 2014 by Céline Oulié, the Clos Les Mets d'âmes is carried out in organic and biodynamic agriculture. The farm Les Mets d´Âmes produces natural wines of the Madiran and Pacherenc du Vic-Bilh appellation, Vins de France as well as grape juice and cereals in short circuits. With her thirty hectares in one piece, including 7.8 hectares planted with vines, Céline Oulié can apply her plant preparations, compost while taking into account lunar and planetary periods. It also offers "La Balade Enchantée des Mets d´Âmes": tours through the vineyard, the paths, the forest.
Pimpren’elle is a blend of Tannat (80%) and Cabernet Franc (20%). The manually harvested grapes undergo a short 4-day maceration then fermentation is carried out in concrete vats. Aging lasts 6 months, in vats.
