Cotswold Distillery is located in the Cotswolds countryside, a rural area of South England covering parts of six counties. It was established in 2014 by Daniel Szor. Since, it has been producing some Dry Gin and Single Malt whiskies. The initial development of the distillery was assisted by Harry Cockburn (a Master Distiller and former Production Director at Bowmore distillery) and Dr. Jim Swan (an expert in cask maturation whose previous projects include work with Penderyn in Wales, Kavalan in Taiwan and The Milk & Honey Distillery in Israel). They are committed to using only local barley. The harvested barley heads to the maltings at Warminster, Britain’s oldest working maltings. The distillery uses a 2500-litre copper pot still made by Forsyths in Rothes to start the double-distillation process. When the best bits from the Low Wines are selected, they are used to make it into the spirit and become whisky. To do this, the Low Wines are distilled in a second still: a 1600-litre spirit still.
This expression is a marriage of Cotswolds Single Malt Whiskies, fully matured in American and Spanish oak hogheads and butts seasoned with Oloroso and Pedro Ximenez Sherries. 9,900 bottles have been produced.
