Domaine des Hautes Glaces is located at an altitude of 896 meters in the Massif du Dévoluy, in the Hautes-Alpes. It was created in 2009 by Frédéric Revol, an agricultural engineer specialising in the management of living organisms. His desire is to create excellent whiskies that promote soil fertility and minimise the carbon footprint. To date, the distillery has mastered all stages of production, entirely in organic farming. The cereals come from 5 plots with different climatic and geological properties. Fermentation lasts approximately one week and the distillation is carried out in two pairs of Charentais still with open flame: a 2,500-litres wash still and a 700-litres spirit still.
Flavis is a limited edition of Domaine des Hautes Glaces that comes from the Andrieu climate and was bottled in March 2017. This whisky was aged 65 months in French oak barrels, then finished in wine barrels of Vin Jaune for 24 months.
