The Depaz Distillery is ideally located in Martinique, on the lush slopes of the majestic Montagne Pelée, in the heart of the northern part of the Island of Flowers. Historically, these fertile lands were used for tobacco, indigo cultivation, and livestock farming. However, it was Victor Depaz who profoundly transformed this terroir by developing sugarcane cultivation, thanks to his innovations in distillation techniques that allowed the production of agricultural rum of remarkable quality.
On May 8, 1902, Montagne Pelée violently erupted, causing the destruction of the city of Saint-Pierre and taking with it the family of Victor Depaz, who was then a student in Bordeaux. Orphaned and ruined, he moved to Canada. During a stopover in Martinique, the desire to continue the family legacy prevailed. He returned to Saint-Pierre, to the Habitation Périnelle, his birthplace.
On May 8, 1917, exactly 15 years after the eruption, he restarted production by establishing a new distillery powered by the 521 hectares of sugarcane he now owned, cultivated under the benevolent shadow of Montagne Pelée.
Victor Depaz then built a sumptuous residence, a faithful replica of Habitation Périnelle, quickly called Château Depaz, where he settled in 1922 with his wife and eleven children. In the 1950s, his sons André and Raoul Depaz took over, modernizing sugarcane cultivation and optimizing the distillery, now renowned under the prestigious name of Distillerie Depaz.
Today, the Depaz Distillery remains one of the smallest and most authentic rum production facilities in Martinique. True to its origins, it still operates thanks to its old steam engine, the true historic heart of the distillery. This provides the steam necessary to power the mills crushing the cane, as well as the distillation columns, thus guaranteeing unique flavors and unmatched quality in its agricultural rums.
The Cuvée de la Montagne comes from a meticulous distillation of pure juice freshly harvested at the foot of the Montagne Pelée. This white agricultural rum of remarkable purity is bottled at 55%, offering a perfect balance between aromatic power and gustatory finesse, ideal for lovers of exceptional white rums.
