La Escondida - Blanco Artesanal - Mezcal Espadin - 40%
La Escondida is a brand of Mezcal created by the Grand Mezcal company in 2014. This spirit is made from cooked, fermented and distilled agave. Originally from Oaxaca in Mexico, its production is based on traditional methods which gives it a smoky taste with notes of pepper and honey.
After 7 to 10 years of waiting, the agaves mature and are grown individually. Starting with the cutting of their leaves reaching up to 1.5 m high, it is then the turn of the heart (piña) of 150 kg to be extracted. Volcanic stones are placed in the centre of a hollow on the ground to be covered with earth. Agave hearts are delicately placed on top and then covered with several layers of leaves and soil. Cooking then lasts a week. Once cooked, the agaves are crushed by a stone wheel weighing almost a ton, itself driven by a horse. The crushed agaves are then placed in oak barrels, a fermentation that takes between 8 and 10 days. The liquid obtained passes twice through copper stills before being approved by the master mezcalero who tastes the final product in a jicara (calabash).
