LUCIEN AVIET - Yellow Wine - Cuvée de la Confrérie 2013
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well-maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
Lucien Aviet's Vin Jaune is made with Savagnin from several plots but whose terroir is composed of gray marls. The grapes are harvested manually and then immediately pressed. The wine is aged for 8 years in 228 liter barrels and demi-muids . Breeding is oxidative .
