Domaine Pierre Amiot and Son - Charmes Chambertin 2020
Domaine Didier and Jean-Louis Amiot is located in Morey-Saint-Denis, in Burgundy . Since 1981, Jean-Louis Amiot and his brother Didier have managed the Domaine, which covers nearly 8 hectares in Morey-Saint-Denis and Gevrey-Chambertin . They offer a range comprising wines at each level of appellation: 2 Burgundies, 3 Villages, 5 Premiers Crus and 2 Grands Crus. The estate practices sustainable agriculture .
The wines are made according to traditional Burgundian vinification. The harvest is harvested manually then sorted on a vibrating table. Destemming varies from 70 to 100% depending on the vintage. The extraction is gentle and slow, carried out by a cold maceration of 5 to 7 days with a reasoned alternation of punching down and pumping over. Fermentation with indigenous yeasts lasts about 10 days with monitoring and temperature control. The aging takes place in French oak barrels of 228 liters for 15 to 18 months. The proportion of new barrels varies according to the cuvées: 30% for the Premiers Crus and 50% for the Grands Crus. Racking and bottling are carried out according to the lunar cycles.
The Charmes-Chambertin Grand Cru comes from two plots of Pinot Noir spread over an area of 0.15 hectares. The age of the vineyard is over 50 years old. The aging is done in oak barrels with 50% new barrels . Since 2012, this production has been supplemented by the purchase of grapes to obtain a volume that is easier to vinify and to offer a wine that is more representative of the appellation.
