Capovilla is an Italian distillery located in the old cellars of Villa Dolfin Boldù in Rosa, near Bassano del Grappa , near Venice . It was created by Vittorio Capovilla , a mechanic by profession, who became recognized worldwide as one of the best distillers. Since 1976, he has been experimenting with distillation, preservation and reduction techniques through numerous registered patents, in order to purify his spirits and extract the quintessence of fruit and grape marc. Capovilla is also well known for its very low use of sulfur dioxide , and only very ripe fruit grown in its vineyards. Four hectares owned by Capovilla are officially organic , and the estate has gone out of its way to select old varieties of plums, pears and peaches (among others) that are now rare but of very high quality .

This eau-de-vie is made from Mirabelle “Susine” harvested in 2011. 369 bottles were produced.
