Domaine Jean Dauvissat - Petit Chablis 2020
Domaine Jean Dauvissat Père et Fils is located in Milly, in the Chablis appellation. The wines are produced in the Petit-Chablis, Chablis and Chablis Premier Cru appellations. The vineyard extends over 22 hectares, over 7 municipalities and has 53 plots. This very fragmented distribution makes it possible to obtain wines that are well representative of the entire Chablis vineyard, and in particular to benefit from the specific characteristics of the two banks of the Serein valley. The estate is in the process of being converted to organic farming . No weed killer or insecticide has been used since 2011, and biodynamic practices have been in place since 2018. The grapes are harvested at optimum maturity and then sorted upon arrival at the vat room. Each cuvée is vinified according to its geographical location. Indigenous yeasts are used for fermentation and aging is relatively long (1 to 2 years).
Petit-Chablis comes from a plot of 0.16 hectares located on the Chapelle Vaupelteigne plateau. After a long pressing and static settling for 12 hours, fermentation occurs spontaneously. The malolactic fermentation begins a long aging on fine lees . The wine is bottled 12 months after harvest.
