The Gospel is a brand of rye whiskey , produced in Melbourne, Australia . Founder and Master Distiller Ian Thorn has spent over two decades in the UK brewing and distilling industry. On his return to Australia, he became a distiller for Starward where he worked there for 7 years. By the time he left Starward, Ian Thorn had accumulated enough distilling knowledge to become a sought-after consultant. It was during this period that he also began teaching the next generation of distillers, having been supported by the mentor who had overseen his masters program and now teaches international students for the Institute of Brewing & Distilling. . The Gospel incorporated a number of approaches with which it had no prior practical experience. The majority of his previous distillery work involved making malt whiskey in pot stills. Conversely, The Gospel works with rye and uses a continuous column for distillation.
The Gospel Straight Rye is made from unmalted Australian rye sourced from a single farm in the Murray Mallee region of South Australia. The whiskey is distilled twice and then aged in barrels for at least two years in Melbourne's dynamic climate ; the temperature in Melbourne can fluctuate by 20 degrees from day to day. This means that the alcohol expands and contracts in the barrel several times over a period of time, forcing the alcohol into the oak. The barrels used to mature Gospel Straight Rye are made from new American oak , sourced from a cooperage in Kentucky, USA, which sources oak from a single forest. They are strongly heated with varying levels of carbonization.
