Domaine SEROL - Why Do Without White 2021
Domaine Sérol is a family estate, cultivated biodynamically , on the eastern foothills of the Massif Central , near the Loire gorges. Stéphane Sérol took over the estate from his father in 1996. With his wife Carine, they selected the best potential terroirs of granitic soils at high altitude (400 to 500 meters) and cleared the fields to replant the vines. They naturally chose to plant the local grape varieties of the region : Gamay Saint Romain (32 hectares) and 2 hectares of Viognier. A new vineyard of 2 hectares of Chenin Blanc was planted in 2018.
Why Faire Sans Blanc 2021 comes from a harvest of Chenin Blanc grown on high-altitude terroirs. The 2021 vintage experienced a major frost episode which led to losses across the entire estate. Consequently, the Domaine de Sérol has purchased certified organic grapes from winegrower friends. Vinification took place at the estate, with direct pressing upon arrival of the grapes in the cellar. The alcoholic fermentation took place in 500 liter barrels, tuns and concrete vats . The wine was aged for 6 months on fine lees .
