The history of the Assier family in Martinique begins in 1710 when Jean Assier, a young lawyer from Montpellier, arrives on the island and works in the service of the Governor of Phélypeaux. A few centuries later, his direct descendant, Yves Assier de Pompignan , embarked on a daring and exciting project: the creation of a new rum distillery carrying with it the history and richness of the terroir of the Antilles. Indeed, the takeover of the Habitation du Simon, ideally located in the heart of an exceptional region, and the unfailing passion that animates it for its island and its wealth, have enabled Yves Assier de Pompignan to tackle since many years to create a brand of rum combining tradition and modernity .
In 2010, the decision was made to start the project and then began the work of selecting the great old rums intended for blending. An aging cellar equipped with a barrel previously used for Cognac and a laboratory are created at the Habitation. The first selections, then aged 6 to 11 years, were re-aged in 320-litre French oak barrels. At the same time, the search for an innovative, qualitative and traditional distillation solution at the same time led Yves Astier to choose a Charentais still entirely in copper, complete with a column with seven trays . Fermentation tanks at controlled temperature and allowing long fermentations are used in order to obtain cane wines with high aromatic potential. The administrative procedures, long and tedious, culminate on December 31, 2015 following the authorization to open a distillery intended for the manufacture of Agricultural Rums. Work on the rum plant then began and it was installed in a former 18th century sugar purgerie, in the heart of the estate. Finally and after 10 years of time spent learning and imagining, the brand new A1710 distillery was inaugurated in December 2016 at the Habitation by Yves Assier de Pompignan and his team.
The A1710 Rums are produced organically from sugar cane from a plot cultivated without fertilizers, pesticides, herbicides or other chemical products, which was planted on the site and where two varieties of cane grow: the " Blue Cane " and the " Purple cane ".
La Perle Fine is distilled twice from fresh cane juice, from the plots of Madame Joseph Sylvestre and Monsieur Paul Octave de Ducos et du Saint-Esprit. The canes are cut by hand and are only pressed once. After a long fermentation of 5 to 7 days, the vesou is distilled twice several days apart. This rum is bottled at its natural degree of 67.5%.
