Domaine Philippe Valette - And Yet 2019
Domaine Philippe Valette is located in the village of Chaintré, in the Mâconnais in Burgundy . From 1990, the couple Philippe and Cécile Valette decided to cultivate their 15 hectares of vines in organic farming , with the principles of biodynamics from 1992 but without certification . Patience is their philosophy: they harvest the grapes at optimum maturity, even if it means reducing yields, and favor long aging in barrels.
Et Yet is made from Chardonnay whose vines are around 70 years old, grown on clay-limestone soil. The harvest is done manually and the grapes are pressed slowly. The wine is aged on fine lees for 12 months in oak barrels that have contained between 3 to 5 different wines, before being transferred to vats for an additional 18 months .
