The Red Boots - Jean-Baptiste Menigoz - Phew! - Sparkling Natural 2020
Domaine Les Boots Rouges is located in Abergement-le-Petit, in the Jura region. Jean-Baptiste Ménigoz was a part-time teacher of disabled children before devoting himself entirely to viticulture in 2011 by creating the Les Boots Rouges estate. He established a philosophy of natural viticulture , no doubt under the influence of his good friend and fellow winemaker, Raphaël Monnier. After a few vintages made with the help of his wife, Jacqueline, he was joined in 2014 by Florien Kleine Snuverink , originally from the Netherlands. The general theme is quite simple: native yeasts, no fining or filtration, depending on the cuvée, and low to sulfur-free. As Jean-Baptiste says, "We make the wines we like to drink ourselves". For the anecdote, the name of the 3-hectare Jura estate comes from the Wampas' song "The Red Boots".
Phew! is a blend of Chardonnay and Savagnin . It is a natural sparkling wine , which means that the effervescence is achieved by continuing alcoholic fermentation with native yeasts after bottling. It contains residual sugar .
