Independent bottler Michel Couvreur was originally a producer and merchant of Burgundy wine. He turned to the world of whiskey in 1978 and distilled for the first time in Edradour in 1986. At the time, he wanted to buy a distillery in Scotland but his wife was against it and they decided to settle in Bouze . -Lès-Beaune , halfway between Scotland and Andalusia, and to intervene in the breeding of whiskeys; mainly in Sherry and Port casks. The range is very varied and a meticulous work of assembly, selection of new barrels, unusual techniques is undertaken daily. Since his death in 2013, his son-in-law Cyril Deschamps and his wife Alexandra have continued the work of Michel Couvreur.
The Unexpected No.3 is brewed exclusively from Vanessa barley. It was distilled in a French still on December 1 , 2012. It aged and matured for more than 10 years in Sherry casks in Burgundy and bottled on February 23, 2023. 2,500 bottles have been produced.
