The Cotswold Distillery is located in the Cotswold countryside, a rural area in southern England covering parts of six counties. It was created in 2014 by Daniel Szor . Since then, production has been based on Dry Gins and Single Malts. The initial development of the distillery was assisted by Harry Cockburn (a master distiller and former production manager at the Bowmore Distillery) and Dr Jim Swan (a barrel maturation expert whose previous projects include working with Penderyn in the Land of Wales, Kavalan in Taiwan and The Milk & Honey Distillery in Israel). They undertake to use only local barley . The harvested barley goes to the Warminster maltings, the oldest in operation in Britain. The distillery uses a 2500 liter copper pot still made by Forsyths in Rothes to start the double distillation process. When the best parts of Low Wines are selected, they are used to make spirits and become whiskey. To do this, the Low Wines are distilled in a second still: a 1600 liter still.
The Wildflower Gin collection is inspired by the grasslands of the Cotswolds. No.2 is made from London Dry gin containing juniper, coriander and angelica, to which essences of gentian, elderflower, chamomile, lemon balm and other botanicals are added.
