Daftmill is a family farm located in the Howe of Fife , in the Lowlands of Scotland . The farm produces carrots, broccoli, potatoes, grows grain (mainly malting barley), and raises beef cattle. In June 2003, Francis and Ian Cuthbert applied for planning permission to convert the old mill buildings into a distillery. Repairing buildings and installing equipment lasted from 2004 until late 2005 when they finally received their license to start distilling. Apart from the stills (a 3,000 liter still and a 2,000 liter still) and the mash tun which came from the Boilermaker Forsyths in Rothes, all the other equipment, work to convert the buildings and to create the distillery were supplied by contractors. local craftsmen from the Cupar region. The first whiskey was produced on December 16, 2005, making Daftmill the newest distillery to open in Scotland at that time with the first bottles released in May 2018. In the distillery they use barley they grow on the farm and water from their own well to make whiskey. The distillery operates on a seasonal basis around the agricultural calendar. During the winter months, when the chores on the farm are less, Francis and Ian make their whisky, but in the spring they have to sow barley, plant potatoes and put the cattle out to pasture. In the middle of summer there is again a lull in the agricultural work and they distill in June and July before stopping again for the harvest. This operation was once the norm, but has not been seen in Scotland for 100 years and therefore a small production of 100 casks is produced each year.
The Publican variety of barley was grown in the approximately 17 hectare field and was harvested on August 28 and 29, 2009. It was then dried and stored on the farm to be malted at Alloa during the summer of 2010. The This cuvée's whiskey comes from 25 first-fill ex-Bourbon casks , which were filled in November and December 2010. It was stored in the farm's warehouse until bottling in 2023.
