The Castan Distillery is located in Villeneuve-sur-Vère, in Tarn . In 1941, Gilbert and his son Jacques were itinerant distillers, taking a traveling still through villages in Tarn and Aveyron, to distil the fruits of individuals. A disappearing practice, which forced Sébastien Castan , third generation, to reinvent the profession, and to focus on whiskey. He owns the land around the distillery and cultivates different cereals in rotation, promoting the production of malting barley. The Castan family farm has been certified in organic farming since 2016. The barley grains are sent to a malting plant external to the distillery and the water used is drawn from a depth of 110 meters, which makes it rich in minerals. The distillation is carried out with a red copper still from 1929, inherited from grandfather Gilbert Castan and modernized over the years. The first Tarnais Whiskey was distilled in February 2010 and bottled in April 2013.

Vilanova Berbie is the first Single Malt distilled by the Castan Distillery. It is aged in French oak barrels that have contained white wine .
