Mas del Périé - Fabien Jouves - Block B763 2021
Fabien Jouves comes from an old peasant family from the Causse. He became a winemaker in 2006 by creating Mas del Périé on the highest slopes of Cahors . Here, Malbec (also called Côt) is the grape variety of choice. Due to the location of the estate at the junction of the terroirs of the hills of Quercy and those of Cahors, the selection of plots was obvious for Fabien to express the different facets of Malbec. This expression of the terroir is reinforced by biodynamic agriculture certified since 2011, respectful of life, plants, people and their environment. The vinification of the grapes in the cellar is done naturally, without oenological inputs, and the wine is accompanied until its maturity, in concrete vats, barrels and tuns depending on its personality.
B763 comes from 50 year old Malbec vines. After the manual harvest, the grapes are destemmed and vatted for 30 days in ovoid vats. Aging lasts 18 months in ovoid vats and barrels .
