Cidrerie du Vulcain - Extra dry cider - Trois Pépins 2020
La Cidrerie du Vulcain has been producing local ciders in the canton of Fribourg , Switzerland , since 2006. Jacques Perritaz , after his meeting with Eric Bordelet in Normandy, decided to use "forgotten " fruits from old isolated orchards and not treaties from the Pays de Fribourg, with a custom press to make natural ciders . Since 2013, he has undertaken the planting of a 4 hectare orchard with old juice, cider, perry and calva varieties called Les Vergers du Vulcain s . Its orchard is cultivated organically .
The Trois Pépins Dry Cider is made from apples, pears and quinces partially fermented using the “guillage” technique (fermentation of the juice recently started, which pushes the foam called yeast out of the barrel). It is a Pure Juice Cider ; fermented with its native yeasts and coarsely filtered.
