Chateau Simone - Rosé 2023
Château Simone is located in the commune of Meyreuil, in the small appellation of Palette en Provence . It has belonged to the Rougier family since 1830. Its exposed location on the northern slope of the Montaiguet massif, in a cirque protected from the winds and crossed by the Arc, gives it a particular microclimate . The vineyard is influenced by the biodiversity of the forest environment, the supply of humidity from the river and its mass of greenery, the direction and attenuation of the force of the winds.
Château Simone Rosé is a blend of Grenache (45%), Mourvèdre (30%), Cinsault (5%) and secondary grape varieties (Syrah, Castet, Manosquin, Carignan and various Muscats) . The harvest is carried out exclusively by hand, at full maturity with sorting of the grapes. The grapes are lightly crushed, partially destemmed and then pressed. The blend is made with a proportion of saignée juice. The aging is carried out exclusively in small oak tuns , on fine lees .
