This Anthologia cuvée from Château Tour des Gendres is made from a 130-acre plot planted with sauvignon . The soil is clay-limestone and yields low, around 20 hectoliters per hectare.
The harvest is manual and carried out in several passages. The grapes are completely destemmed before vinification in Allier oak barrels, half renewed every year, then maturing for 12 months on fine lees , with regular stirring.
The result is a wine with a complex bouquet where you will find citrus fruits, exotic fruits, honey and vanilla. The terroir, dominated by limestone, leaves its mineral imprint in this dense and nervous bottle . This dry Bergerac should be kept for a few years in cellars before tasting.
