Authentic Perry - Eric Bordelet - Organic
Discover this very pretty perry, with a beautiful vinosity, with a very precise aromatic structure on the pear. The palate, very fruity and full of freshness, has a fine bubble and a crunchy finish. To drink as an aperitif, this perry will also go well with goat cheese and bitter chocolate.
In addition to these apple trees, Eric Bordelet owns an orchard of multi-hundred-year-old pear trees that he also manages organically. This cuvée of "Poiré l'Authentique" is made from a blend of 14 varieties of pears (Plant de Blanc - Autricotin - De Cloche - Champagne…). The production is done in the same way as for ciders, from an ancestral natural fermentation without chaptalization.
Eric Bordelet's estate is located in southern Normandy, on the Armorican massif in the extension of Domfrontais on the borders of Mayenne and Orne.
The operation is located on upper Brioverian schists, sedimentary rocks dating from the Precambrian; these are rocks formed before the primary era, 3 billion years old. These are normally fairly soft rocks, giving rise to silty or silty clay soils.

Currently, organic and biodynamic cultivation seems best suited in the qualitative sense of the fruit. Indeed, the Domaine d'Éric Bordelet has the 2000 ECOCERT license for commitment to organic production.
