Domaine Vacheron has always led the Domaine in organic farming and more recently in biodynamics (Ecocert and Biodyvin). In terms of terroir, it is a geological fault that separates the Domaine into 2 very different entities: Flint and limestone. This Chambrates cuvée is made from pure Sauvignon on pure limestone. This cuvée with character needs a little time to settle down. 2013 is just starting to show its potential. The wine is very fleshy with a nervous attack, a mid-palate with very racy grain and a tannic finish. Its bitterness at the end of the mouth now turns out to be a major asset, giving “Chabrates” a unique breed!
