White only represents 3% of the production of Tempier wines. It comes from the best terroirs of the property exposed to limited sunshine which generates a slow maturation and thus brings to the development of this wine a very good balance over time after its 8 months passage in casks. Elaborated on the basis of Clairette, Bourboulenc and Ugni blanc grape varieties, the white develops very mineral notes on freshness with a beautiful aromatic expression of citrus fruits and white flowers. Drink over 6 to 8 years.
The Tempier estate has a terroir with plots of various types, with various exposures: a real source of complexity. The white grape variety comprises 60% Clairette, completed with Ugni blanc, Bourboulenc and a little Marsanne (3%).
The traditional way of driving is the goblet, but some Cinsault and Grenaches are cut from Royat cords and trellised to ventilate the grape area a little. Pruning takes place from December to February respecting the lunar phases. We leave six eyes per plant. The disbudding begins at the end of April, it is carried out by hand. We select the vegetative parts that should produce the grape and we eliminate unwanted shoots in order to limit production.
