DOMAINE SEROL - TURBULLENT - Rosé
Domain Sérol is a family-estate, farmed biodynamically, on the eastern foothills of the Massif Central, close to the gorges de la Loire. Stéphane Sérol took over the estate from his father in 1996. With his wife, Carine, they selected the best potential terroirs of granite soils at high altitude (400 to 500 meters) and cleared the fields to replant vineyards. They naturally chose to plant the region’s indigenous local grape varieties: Gamay Saint Romain (32 hectares) and 2 hectares of Viognier. One new vineyard of 2 hectares of Chenin Blanc has been planted in 2018.
Turbullent is a sparkling rosé made from young vines of Gamay Saint Romain grown on sandy soils. It is made according to the ancestral method. The grapes are pressed, followed by cold settling of the juice. The alcoholic fermentation starts in cement tanks at low temperature with indigenous yeasts until the wine reaches 7% alcohol. The wine is then bottled, and fermentation continues until the wine reaches 8.3% alcohol and 5 bars of pressure. The bottles are then disgorged to remove the deposit. It is bottled at 12 g/L of residual sugar.
