BOLOGNE - White Rum - Black Cane - 50%

The Bologne distillery was born in 1887 in Guadeloupe in the French West Indies. In a small paradise, between sea and mountains, it enjoys a magnificent volcanic soil perfectly adapted to the development of sugar cane. The typicality of the Bologna rums is explained by all the following factors: a pure spring water of the mountains, an optimal exposure to the sun, volcanic lands rich in minerals for the well being of the canes and this iodized air which bring this small saline touch. That's the magic of these rums: the conjunction of these natural elements.

And it does not stop there because Bologne is also the Black Cane. An old variety of cane that was abandoned for its low sugar production. But if it does not produce much, its juices are of an extreme quality! Bologne, it is the only distillery of the island which still owns these rods. An exceptional aromatic potential that today is an integral part of the whole range of products of this beautiful house.

A few years ago, the master distiller of the house wanted to make a limited edition of a white rum 100% Black Cane: the Bologne Black Cane 50% was born. The cutting of black canes is done manually and only in good weather so as not to dilute the potential present in the canes. Harvested at opitimal maturity according to a precise study of plots, which is rare in the world of rum, the juices are subsequently fermented and distilled (at low temperature) in a copper column. Speed is the key word to avoid oxidation and safeguard the aromatic potential. Then follows the maturation during which an evaporation favorable to the concentration is carried out. Perfect ripening for an exceptional white!

In tasting, the team of Clos des Millésimes fell in love with: a sweet nose with a great aromatic complexity on exotic fruits and citrus fruits such as lime. Do not hesitate to ventilate it long enough. On the palate it is the fruits and flowers that dominate at first to finish on spicy and even marine notes. Sweet and balanced tasting finishes over a long time around the flowers and small notes of ginger. To drink dry or ti'punch with friends!
