Jean-François Ganevat - Crémant du Jura
Native from the Jura, Jean-François Ganevat worked alongside with Jean-Marc Morey in Chassagne-Montrachet in the Côte de Beaune for several years. He now cultivates 13 hectares of vines at Hameau de la Combe in Rotalier: 9.5ha in white and 3.5ha in red. The distribution is as following: 75% of Chardonnay, 40% of Pinot Noir as well as the indigenous varieties of Jura; Savagnin (25%), Poulsard/Ploussard (30%) and Trousseau (25%). Since 2006, he has perfectly mastered biodynamy, even if he sometimes uses copper and sulfur in minimal quantities during difficult years. The particularity of Domaine Ganevat is to isolate each plot to preserve the variety of terroirs, from the vineyard to the cellar.
This Crémant-du-Jura AOP, also named "Fanfan’s Bubble" is a natural sparkling wine made of 100% Chardonnay, harvested early enough to maintain the natural acidity of the grape variety. The maturation lasts 48 months in demi-muids, of which 24 to 36 months on laths. Without added sulfites and without dosage, this wine is rich and reveals aromas of hazelnuts and walnuts on a tangy touch.
